Spring is on its way!!!  Can you believe how wet our winter has been?  Hopefully the weather will clear up and we start to get back to the outdoors!  It's much more fun to take a walk (or play golf in my case!!) when it is pleasant outside.
 
Don't forget that I will be on vacation from Wednesday March 23rd to Sunday March 27th so if you happen to have a session on that Wednesday, Thursday or Friday mark your calendar!  Take a look at my schedule to see if there are any openings to do a make-up.
 
IN THE NEWS!!!!!!
 
New Food Pyramid!!!  I know that this is not the latest news but I wanted to review the changes in the food pyramid guidelines.  In 1992, the US Department of Agriculture officially released a food guide and its recommendations are widely known:  minimize consumption of fats, eat 6-11 servings of complex carbohydrates.  This old food diary did not make any distinctions between types of fat or types of protein. Some fat consumption and depending on which type of fat, is good for you and some people tend to replace fats in their diets with foods that are high in sugar. 
 
Here are some guidelines of the new Healthy Eating Pyramid:
-whole grain foods, vegetable oils and fruits and vegetables are emphasized
-physical activity and weight control are emphasized
-red meat, butter, sweets and refined grains are de-emphasized and should  be eaten sparingly
-protein sources are divided into categories emphasizing nuts and legumes, followed by fish, poultry and eggs
-dairy products are de-emphasized and placed in a category with calcium supplements
-a daily multi-vitamin tablet is recommended for most people as insurance not as a substitute for healthy eating.
-moderate daily alcohol intake is a healthy option unless it does not make sense for that person.
Recipe of the Month!!!
 
Yucatan-style Chicken, Lime and Orzo soup - I myself have not had a chance to make this soup but it looks great.  I got this recipe from one of my clients who loved it!
 
Ingredients:
3/4 cup Orzo
1 1/2 tablespooons olive oil
1 medium white onion, thinly sliced and cut into small peices
6 garlic cloves
2 jalepeno chiles, thinly sliced (optional)
1 pound skinless boneless chicken breasts, cut into matchstick-size strips
5 cups chicken broth
1/4 cup fresh lime juice
1 large tomato, seeded and chopped
1/4 cup fresh cilantro
Fresh cilantro sprigs
 
Cook orzo in poit of boiling water until just tender.  Drain well.
 
Heat oil in large saucepan over medium heat.  Add onion, garlic and chiles.  Saute until onion begins to brown, about 4 minutes.  Add chicken; saute 1 minute.  Add broth, lime juice and tomato.  Simmer until chicken is  cooked through, about 3 minutes.  Mix in orzo, then chopped cilantro.  Season soup with salt and pepper.  Ladle soup into bowls.  Garnish with cilantro sprigs.  Yield:  4 servings
